How to Make Loaded Baked Potato Salad
- Start by washing your potatoes well before cutting them into bite-sized chunks. There’s no need to peel them, which saves time and adds great texture.
- Place the potatoes into a large pot of cold, salted water and bring everything to a boil. Cook until the potatoes are fork tender, about 10 to 12 minutes. Drain well and allow them to cool completely.
- While the potatoes cool, whisk together the mayonnaise, sour cream, Worcestershire sauce, salt, and pepper in a large mixing bowl until smooth.
- Once the potatoes have cooled, gently fold them into the dressing along with the shredded cheddar cheese, bacon, and green onions. Reserve a little of each topping for garnish before serving.
- Cover the bowl and refrigerate for at least one hour. This allows all of the flavors to blend together while giving the dressing time to soak into the potatoes.
- Right before serving, sprinkle on the reserved bacon, cheese, and green onions for a fresh, colorful finish.

- Shred your cheese. I love shortcuts as much as anyone, but this is one place where freshly shredded cheddar is absolutely worth the extra two minutes.
- Buy thick-cut bacon. Instead of grabbing packaged bacon, I usually ask the butcher at Kroger for six thick Hickory smoked slices. The larger bacon pieces hold up beautifully throughout the salad and add AMAZING flavor.
- Cool the potatoes completely. Warm potatoes can make the dressing thinner than you want.
- Don’t skip the chill time. One hour is the minimum, but overnight is even better.

This loaded baked potato salad is creamy, cheesy, packed with bacon, and the perfect make-ahead side dish for summer cookouts.
Ingredients
- 2 lb Russet Potatoes (About 4-5 large potatoes)
- 1 Cup Sharp Cheddar Cheese, Shredded
- 1 Cup Mayonnaise
- ½ Cup Sour Cream
- 1 tsp Worcestershire Sauce
- 6 Slices Bacon, cooked and crumbled
- 3 Green Onions, Chopped
- ½ tsp Salt (or to taste),
- ½ tsp Black Pepper (or to taste)
Instructions
- Wash and dry the potatoes, then cut them into bite-sized chunks. Add them to a pot of cold salted water and bring to a boil. Cook for 10–12 minutes, or until fork tender. Drain and allow the potatoes to cool completely.
