How to Make Pasta Salad Taste Better the Next Day

One of the reasons I love pasta salad so much during busy seasons is that it’s one of the few recipes that actually gets better after sitting in the fridge overnight.

That makes it perfect for:

  • Meal Prep Lunches
  • Backyard BBQs
  • Summer Potlucks
  • Sports Tournament Weekends
  • Or just surviving the week with a little less cooking

But if you’ve ever pulled out a dry, bland pasta salad the next day, you already know there are a few tricks that make a huge difference.

Slightly Undercook the Pasta

This is probably the biggest game changer.

Pasta naturally absorbs dressing as it sits in the fridge, so if the noodles are already soft when you mix everything together, they can turn mushy overnight.

Cooking the pasta just slightly past al dente helps it hold up much better the next day.

Save a Little Extra Dressing

Pasta salads almost always dry out a bit after chilling.

I like to reserve a small amount of dressing before mixing everything together so I can toss it in right before serving leftovers the next day. It instantly freshens everything back up without needing to remake the whole dish.

Even a splash of olive oil or a squeeze of lemon juice can help wake the flavors back up.

Wait to Add Crunchy Ingredients

A larger storage container gives you room to toss everything again before serving, which helps redistribute the dressing and flavors evenly.
