How I Turn One Pack of Rotisserie Chicken Into 3–5 Easy Weeknight Dinners
Step 1: HOW I PREP THE CHICKEN IN 5 MINUTES
When I get home, I do this right away:
- If I bought a whole rotisserie chicken, I would remove all the meat and shred it
- If I grabbed the 3 lb pre-pulled rotisserie chicken (my usual), I would quickly chop it into smaller, bite-sized pieces
- Then I divide it into three 1-pound containers or bags for the week
This takes about 5–10 minutes total and makes dinner so much easier the rest of the week.
This is one of those small things that saves me so much time later. When everything is already chopped and portioned, dinner comes together in minutes instead of feeling like another task.

DAY 1: EASY CHICKEN TACOS OR QUESADILLAS
This is usually the first night because it’s the fastest.
What I Do:
- Grab one of my pre-portioned containers
- Warm up the already chopped chicken
- Add taco seasoning or salsa
