If you need a comforting weeknight dinner that comes together fast, this chicken and broccoli pasta is exactly the recipe for you. Our evenings are packed with homework, getting the kids to practice, and trying to keep everyone fed without resorting to drive-thru again. This recipe keeps things simple by cooking the pasta, chicken, and broccoli all in one pot, creating a creamy, flavorful sauce without an extra dish in sight.

And because you can use pre-cooked chicken from your Sunday meal prep or a Costco rotisserie chicken, it is a dinner that saves you time even on the busiest nights.

What You’ll Love About This Chicken and Broccoli Pasta:

  • QUICK COOKING TIME – This entire dish comes together in about 30 minutes, making it ideal for busy practice nights.
  • ONE POT MEANS LESS CLEANUP – The pasta, sauce, and chicken cook together in the same pot, which keeps dinnertime simple.
  • COMFORT FOOD THE WHOLE FAMILY WILL EAT – It’s creamy, cozy, and loaded with familiar flavors moms and kids love.
  • AFFORDABLE – Pantry staples like pasta, broth, and broccoli keep this recipe budget-friendly.

What Makes This Dinner So Good

This recipe works because the pasta cooks directly in the broth and half-and-half mixture, allowing the noodles to absorb flavor while naturally thickening the sauce. Adding broccoli toward the end keeps it tender but not mushy, and finishing everything with freshly grated parmesan makes the dish creamy, comforting, and absolutely irresistible.

Ingredients Needed

  • Chicken Breasts: A lean protein that cooks quickly and absorbs all the delicious sauce.
  • Olive Oil: Helps brown the chicken and adds depth of flavor.
  • Minced Garlic: Brings a warm and aromatic base to the dish.
  • Italian Seasoning: Adds herb flavor without measuring multiple spices.
  • Chicken Broth: Forms the base of the creamy sauce while keeping the dish savory.
  • Half And Half: Gives the pasta its silky sauce without being too heavy.
  • Cavatappi Pasta: Holds onto the creamy sauce beautifully, but any short pasta works.
  • Broccoli Florets: Adds color, nutrients, and a fresh bite to balance the richness.
  • Salt And Pepper: Essential for seasoning each layer.
  • Parmesan Cheese: Melts into the pasta for a final salty, cheesy finish.

How To Make Chicken & Broccoli Pasta

  • Preheat your oven to 350 degrees Fahrenheit if you plan to finish this dish as a baked casserole. Spray a 9×13 dish with non-stick spray and set it aside.
  • Heat olive oil in a Dutch oven over medium-high heat. Add the cubed chicken and sauté for 4 to 5 minutes, stirring occasionally until it’s no longer pink on the outside. The chicken will finish cooking in the sauce later.
  • Add the minced garlic, Italian seasoning, chicken broth, half and half, and uncooked pasta to the pot. Increase the heat to high and bring everything to a gentle boil. Once boiling, reduce the heat to medium-low and simmer for about 8 minutes, stirring occasionally to prevent the pasta from sticking.
  • When the pasta is almost tender, reduce the heat to low and add the broccoli florets. Season with salt and pepper to taste. Cover and cook for another 4 to 5 minutes until the broccoli is fork tender.
  • At this point, you can serve the pasta straight from the pot or transfer it to the prepared baking dish. Sprinkle the parmesan cheese over the top and bake for 4 to 5 minutes until melted. If you prefer a true one-pot version, sprinkle the cheese directly over the Dutch oven and bake with the lid off for 5 to 7 minutes.

Tips & Tricks

  • Freshly grated parmesan melts better than pre-shredded.
  • If using chopped rotisserie chicken, add it during the broccoli step so it doesn’t overcook.
  • If the sauce thickens too much while sitting, add a splash of chicken broth or half and half when reheating.
  • Cut broccoli into small, bite-size pieces so they soften evenly and quickly.

Yield: 4 Servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Make this easy one-pot chicken and broccoli pasta. Creamy, comforting, and fast, it’s a simple dinner your whole family will love.

Ingredients

  • 2 Chicken Breasts, cut into 2-inch cubes
  • 1 Tablespoon Olive Oil (or Avocado Oil)
  • 1 teaspoon Minced Garlic
  • ¼ teaspoon Italian Seasoning
  • 2 cups Chicken Broth
  • 2 cups Half And Half
  • 3 cups Cavatappi Pasta (or your choice of short pasta)
  • 2 cups Broccoli Florets, cut into small pieces
  • Salt and Pepper, to taste
  • 1 cup Parmesan Cheese, freshly grated

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9x13 baking dish in non-stick cooking spray and set aside.
    2. In a Dutch oven over medium heat add olive oil and cubed chicken breasts and saute. Stir occasionally until all the chicken is partially cooked, about 4-5 minutes.
    3. Add minced garlic, Italian seasoning, chicken broth, half and half and pasta. Increase the heat to high and bring to a boil. Once the mixture has reached a gentle boil, decrease the heat to medium-low and allow to simmer for 8 minutes, stirring occasionally.
    4. Reduce the heat to low and add broccoli florets to the pot. Season the pasta with salt and pepper to taste. Cover and cook for 4-5 minutes.
    5. Transfer the pasta to the prepared baking dish and top with shredded Parmesan cheese. Bake for 4-5 minutes or until the cheese has melted. Serve immediately with your favorite garlic bread or a salad. Enjoy!

Notes

  • You can make this a one-pot dinner by sprinkling the Parmesan cheese over the pasta mixture in your Dutch oven and bake for 5-7 minutes.
  • Store any leftovers in the refrigerator for up to 3-4 days. However, the pasta will soak up the sauce the longer it sits. Reheat in a small pot over low heat and add a splash of half and half.
