- 2 Chicken Breasts, cut into 2-inch cubes
- 1 Tablespoon Olive Oil (or Avocado Oil)
- 1 teaspoon Minced Garlic
- ¼ teaspoon Italian Seasoning
- 2 cups Chicken Broth
- 2 cups Half And Half
- 3 cups Cavatappi Pasta (or your choice of short pasta)
- 2 cups Broccoli Florets, cut into small pieces
- Salt and Pepper, to taste
- 1 cup Parmesan Cheese, freshly grated
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray a 9x13 baking dish in non-stick cooking spray and set aside.
- In a Dutch oven over medium heat add olive oil and cubed chicken breasts and saute. Stir occasionally until all the chicken is partially cooked, about 4-5 minutes.
- Add minced garlic, Italian seasoning, chicken broth, half and half and pasta. Increase the heat to high and bring to a boil. Once the mixture has reached a gentle boil, decrease the heat to medium-low and allow to simmer for 8 minutes, stirring occasionally.
- Reduce the heat to low and add broccoli florets to the pot. Season the pasta with salt and pepper to taste. Cover and cook for 4-5 minutes.
