They’re also similar to a really thick, soft cookie bar.

Brown butter sounds intimidating until you do it once. The whole process happens in a small saucepan, and the key is simply staying nearby and watching the color.
Add the butter to a small saucepan over medium heat and let it melt completely.
Once it’s melted, continue cooking and stirring frequently. You’re looking for the butter to develop a deep golden/amber color.
As soon as you see that color, remove it from the heat.
There’s a fairly small window between beautifully browned butter and burned butter, and the butter will continue cooking a little after you turn off the burner. That’s why you want to pull it from the heat rather than waiting for it to become really dark.
Let the butter cool for about 5 minutes before continuing with the recipe.
It doesn’t need to be completely cool. You just don’t want it piping hot when you add the eggs later because the heat could start cooking them.

Look for: Golden to amber color and a toasted aroma.
Don’t wait for: Very dark brown or black specks with a burned smell.

Once you’ve browned the butter, the rest is very straightforward.

- Mix the Butter and Sugars – Add the brown butter, brown sugar, and granulated sugar to a large mixing bowl. Use an electric hand mixer to beat everything together for about 2 minutes.
- Add the Eggs and Vanilla – Add the eggs and vanilla extract and mix for about another minute, until everything is thoroughly combined.
- Add the Dry Ingredients – Reduce the mixer speed and gently add the flour and baking soda. Mix just until you no longer see any dry pockets.
- Bake – Spread the batter into an 8×8-inch baking pan and bake for 20–25 minutes, or until the top is golden brown.
- Let Them Cool – Let the blondies cool for a few minutes before slicing. They’ll still be quite soft when they first come out of the oven and continue setting in the hot pan. Letting them cool makes it much easier to cut clean squares without cracked tops or rough edges.

How Do You Know When Blondies Are Done?
Don’t wait until your blondies look completely firm and dry.
The recipe calls for 20–25 minutes, and you’re looking for a golden-brown top.
The centers will still be softer when the pan comes out of the oven. They’ll continue to set as they sit in the hot baking pan.
Overbaking is one of the easiest ways to lose the soft texture we’re after, so I’d rather start checking them toward the early end of that baking window.

- ½ cup Salted Butter
- 1 cup Light Brown Sugar
- ¼ cup White Granulated Sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Soda
- 1 cup All-Purpose Flour
Instructions
- Melt your butter in a small saucepan over medium heat. Once the butter is completely melted, stir it frequently until it starts to develop an amber color. As soon as it starts to turn burnt orange, turn off the heat and let your brown butter cool for about 5 minutes.
- Combine the brown butter, brown sugar, and white granulated sugar in a large mixing bowl. Use an electric hand mixer to beat the ingredients together for about 2 minutes.
- Add the eggs and vanilla. Beat for an out 1 more minute, or until the eggs are thoroughly beaten and incorporated with the creamed sugar.
- Reduce the speed of your hand mixer and gently whisk in the flour and baking soda. Make sure no dry pockets remain in your blondies batter and then pour the batter into an 8x8 inch baking dish. Bake your blondies for 20-25 minutes, or until the top is golden brown.

Notes
- Your brown butter does not have to cool down too much, just enough that it isn’t burning hot anymore. If it is too hot, then it will start to cook the eggs.
- We haven’t experienced any issues with these blondies sticking to metal, glass, or ceramic pans. If you want to be extra cautious, you can coat your pan with nonstick spray. You can also line your pan with parchment paper so you can lift the whole sheet of blondies out at once after they cool.
