  • ¼ cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons dried herbs (basil, thyme, parsley, and oregano)
  • 1 clove of garlic, minced
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 2 boneless, skinless chicken breasts
  • Avocado oil for oiling the grill grate or skillet
  • For the Alfredo Sauce:
  • 4 tablespoons salted butter
  • 2 tablespoons cream cheese
  • ¾ cup half and half
  • ¾ cup heavy whipping cream
  • 1 teaspoon garlic powder
  • 1 cup Parmesan cheese, grated from a wedge
  • 8 oz uncooked fettuccine noodles
  • Chopped parsley for garnish

The Best Chicken Marinade For Chicken Alfredo

For this recipe, I like to keep the marinade simple so it complements the creamy Alfredo sauce instead of overpowering it. A combination of olive oil, Italian seasoning, garlic powder, salt, pepper, and a squeeze of fresh lemon juice adds plenty of flavor while keeping the grilled chicken juicy and tender. Even letting the chicken marinate for 30 minutes makes a noticeable difference.

How to Make Your Chicken and Alfredo

To Make the Chicken Marinade:

  1. Mix all the marinade ingredients in a large zipper-lock plastic bag. Add the chicken breasts and turn to coat. Refrigerate, turning a few times, for at least 3 hours or up to 24 hours.

To Grill the Chicken:

  1. Preheat the gas grill on medium heat for 15 minutes with the lid closed. Use a brush to clean the grates and brush on avocado oil to prevent sticking. If using a skillet inside, preheat your oiled skillet over medium heat.
  2. Cook chicken on each side for 6-8 minutes or until fully cooked. Fully cooked chicken will read 165 degrees on a thermometer.
  3. Remove from heat once the chicken is fully cooked and let it cool for 15-20 minutes.
  4. Once the chicken has cooled, place it on a cutting board and slice it into about 1-inch slices. Set aside.

The chicken is what takes this Alfredo from good to restaurant-quality.

Instead of simply seasoning the chicken right before grilling, letting it marinate for even 30 minutes gives it more flavor and helps keep it juicy while it cooks.

Once it’s sliced over creamy Alfredo pasta, every bite has plenty of seasoning instead of relying on the sauce alone.

To Make the Alfredo Sauce:

  1. In a saucepan over medium heat, melt together butter, cream cheese, heavy whipping cream, and half and half. Whisk until well combined.
  2. Whisk in garlic powder and Parmesan cheese until melted.
  3. Simmer, stirring often, until the sauce has thickened to a creamy consistency.

Homemade Or Jarred Alfredo?

If you have a little extra time, homemade gives the richest flavor. But if it’s 6:00 on a Tuesday after sports practice, I’m reaching for the shortcut.

  1. Boil 8 oz of uncooked fettuccine noodles in water with a dash of salt until fully cooked.
  2. Add the fully cooked fettuccine noodles to the saucepan with Alfredo sauce. Place sliced chicken on top.
  3. Garnish with chopped parsley and enjoy!

Time and Money Saving Tips

For busy moms, saving time and money is always a priority. Here’s how you can make this delicious Grilled Chicken Fettuccine Alfredo even more budget-friendly:

  • Costco Buys: Purchase your chicken breasts, pasta, and Parmesan cheese at Costco. Buying in bulk not only saves money but also ensures you have quality ingredients on hand.
  • Pre-Shredded Cheese: Opt for pre-shredded Parmesan cheese to save prep time. It’s a great way to cut down on cooking time without sacrificing flavor. Be aware, as mentioned below, this could affect the consistency of your sauce. With that said, I’ve used both pre-shredded parmesan AND have freshly grated Parm based on my available time. Both can work, but both could give you different results.
  • Batch Cooking: Marinate and grill extra chicken breasts to use in salads or sandwiches throughout the week. This will save you time on busy nights.

Whenever we grill chicken for dinner, I’ll often throw two or three extra chicken breasts on the grill. That way I already have perfectly cooked chicken ready for salads, wraps, or quesadillas later in the week.
