Start by preheating your oven to 375 degrees F and coating your mini bundt trays with non-stick spray

Combine butter, sugar, cocoa powder, baking soda, salt , egg, vanilla, and flour. Pour into bundt pan.

Bake for 20 minutes. Let cool.

Using a whisk or mixer, mix the heavy cream, powdered sugar, and peppermint extract.

Drizzle the frosting on top of each cake.

Sprinkle peppermints on top.
